Method — five moves
The fish leads. The sauce follows. The greens finish. Never the other way around.

METHOD 01Portion & salt

METHOD 02Sear
- Portion & salt. Turbot to 220 g fillets, skin on. Score the skin in 4mm parallel lines. Salt heavily on the skin, lightly on the flesh. Rest 15 min at 12 °C.
- Sear. Clarified butter in heavy pan, medium-high. Fish skin-side down, weight it flat for 90 s. Reduce heat, cook 4 min until skin is golden and crisp.
- Flip & rest. Turn once, 90 s on flesh side. Off heat, baste with brown butter and thyme for 30 s. Rest on warm plate 3 min. Internal target 52 °C.
- Mount the sauce. Reduce shallot + vinegar + white wine to 15 ml. Off heat, cube in cold butter (60 g per portion), whisking constantly. Never boil. Season with lemon and salt.
- Plate. Pool of beurre blanc first. Turbot skin-side up. Sea aster and samphire cluster. Roasted salsify diagonal. Confit lemon segment. Fine drizzle of brown-butter dots. Salt at pass.

Training Notes & Common Failures
- ×Crisp skin fails. Pan not hot enough OR fish not dry enough. Dry the skin with paper. Butter must smoke slightly when fish enters.
- ×Split beurre blanc. Sauce boiled. NEVER boil. Off heat before mounting. If it splits, whisk 20 ml boiling water and 30 g cold butter to rescue.
- ×Overcooked fish. Turbot goes chalky above 55 °C. Pull at 50 °C, carry-over to 52 °C during 3-min rest.
- ×Grey greens. Sea greens not iced after blanch. Ice water bath for 60 s. Squeeze dry. Warm through in butter at pass only.
- ×Cold plate. Plate must be 65 °C. Cold plate = cold sauce in 30 s. Non-negotiable.
